Super Sidekick: Cilantro Lime Rice

Rice is a great side for many entrees.  At times, it is fine to serve it plain.  The really great thing about it is that it doesn't  mind some company.  You can spice it up or add all sorts of different flavor profiles and it almost always plays along.  Today's variation is no exception.  It would work great as an accompaniment to Mexican dishes, but is good with many other flavors, as well.


Let's start with the basics.  For many, rice cookers produce more consistent results.  Many people struggle with rice made in a pot.  I suffered the same trouble for years.  Only through trial and error did I come up with the perfect rice method...every time.  

Using the

basic chicken stock

which I have frozen in quantities perfect for making rice and Uncle Ben's converted rice I get the exact same results without fail.  I am not saying here that Uncle Ben's is the only rice to use.  However, if you have a brand that you prefer you will have to determine the necessary quantities of other ingredients to make it work.  I can tell you that when I have tried other brands I have had to add additional liquid.  To that end, I promise if you follow the directions here to the letter you will get good results.

The cilantro and lime add a delightfully fresh touch to the rice.  The flavor is taken a bit further with the onion, but the real plus is the little crunch that the raw onion provides.

Cilantro Lime Rice


The ingredients:

1 1/2 cups Uncle Ben's converted rice

2 1/8 cups chicken stock

1 1/2 teaspoons salt

1 tablespoon butter

2 tablespoons olive oil

1/4 cup chopped cilantro

2 tablespoon finely chopped red onion

zest of 1 lime 

The method:

  1. Place stock, rice, salt, butter, and oil in medium pot.
  2. Bring to boil.
  3. Reduce heat to low and cover pot with lid.
  4. Set a timer for 20 minutes.  Do not disturb pot.
  5. During wait time, wash and chop cilantro; chop onion; zest lime.
  6. When time is up remove lid and turn off heat.
  7. Lightly toss rice with fork.
  8. Transfer rice to bowl.
  9. Add cilantro, onion, and lime zest.
  10. Toss lightly with fork again.
