There’s a reason some things are considered classics. They are tried and true and seldom disappoint. Quiche is one of those things that delivers every time. Classic Quiche Lorraine, named after the Lorraine region of France, is perfect for breakfast or brunch, but could be served anytime of day.

Before you start:

For best results, prepare the crust in advance and make sure it is refrigerated for at least one hour before filling and baking. If serving for breakfast, consider preparing and refrigerating the night before.
Your quiche is done when the center is set and not jiggly.
If the edge of the crust begins to brown too much before the center is set cover just the crust with a thin strip of aluminum foil.
Refrigerate any remaining quiche in an airtight container for up to two days.

The classic French dish that is simple to make and perfect for breakfast or brunch.

The ingredients:

  • 1 pie crust, homemade or store-bought
  • ½ cup cooked and crumbled bacon, 8-10 slices
  • ⅓ cup onion, chopped
  • 4 ounces Swiss cheese, shredded
  • 2 cups half and half
  • 4 eggs
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅛ teaspoon ground nutmeg
  • a few dashes of hot sauce
  • fresh thyme leaves for garnish

  • 2 cups half and half
  • 4 eggs
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅛ teaspoon ground nutmeg
  • a few dashes of hot sauce
  • fresh thyme leaves for garnish

The Method:

Place pie crust in pie pan and press into place. Flute the excess crust at the edge with your fingers. Refrigerate the prepared crust for at least one hour before filling and baking.

Heat oven to 375° F.

Distribute the bacon evenly over the bottom of the crust. Top with onions and shredded cheese.

Place the half and half, eggs, salt, pepper, nutmeg, and hot sauce in a mixing bowl and whisk to combine well. Pour the mixture over the bacon, onions, and cheese.

Bake immediately for 45-50 minutes or until the center is set and the top is browned.

Allow the quiche to stand for 8-10 minutes. Top with fresh thyme leaves before cutting and serving.
