The ingredients:

  • 2 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 1½ teaspoons smoked paprika
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 1½ teaspoons onion powder
  • 1½ teaspoons garlic powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon white pepper
  • 1 teaspoon freshly ground black pepper
  • ¾ teaspoon ground thyme
  • ¾ teaspoon oregano
  • 1 egg white
  • ½ teaspoon liquid smoke
  • 3 cups raw nuts… cashews, almonds, hazelnuts

The Method:

Preheat oven to 250˚F.

Add sugars and spices to a small bowl. Whisk to fully combine. Set aside.

Whisk egg white and liquid smoke together in a separate medium bowl until egg white is foamy. Toss nuts in egg white to fully coat. Add spice mixture to nuts and toss to fully coat.

Pour nuts onto a lightly greased or parchment-lined baking sheet in a single layer, separating them as much as possible. Bake for 1 hour, gently tossing after 30 mintues.

Cool completely and break nuts apart that have stuck together. Store in an airtight container.
